Put the chops on the barbie! Juicy, chewy and tender, have these chops with a nice salad or veg and quinoa. Seriously simple and wholesome meal. Buy a load at your local butchers.
These are of course best grilled on the bbq, however when it’s winter or raining it’s as tasty cooking in the oven.
Oven 180C. Get your lamb chops out of the fridge for room temperature.
Firstly get a tray and lay it with foil or baking paper. Drizzle olive oil on top. Lay your chops on top and season with a pinch of salt and pepper, butter, garlic and add your favourite herb – thyme, rosemary, mixed all work. Rub it all in on to both sides.
Cook in the oven up to 20 minutes, until cooked through, turn half way, so both sides brown evenly.
Blend together the garlic, butter, rosemary, thyme, cayenne and salt until all combined. Then pour olive oil and blend again, into a paste. Rub the paste all over your chops. Place on to a plate and let them marinate for 1 hr in the refrigerator.
Take them out and allow them to come to room temperature.
Heat a pan over high heat. Add the chops, sear for 2 minutes. Flip them over and cook for another 3 mins for a medium-rare. Keep on for 3 more mins for medium.
